Thanksgiving at The Weston would be incomplete without an exceptional dining experience at The Left Bank, the on-property restaurant under the guidance of Executive Chef Bretton Combs.

Known for crafting French country cuisine that echoes the world’s finest bistros, Chef Brett—a celebrated chef with roots in kitchens by Emeril Lagasse and Cat Cora—offers a seasonally inspired three-course Thanksgiving prix fixe menu ($85) featuring dishes like Herb-Roasted Turkey and Beef Wellington.

“With a successful first season at our Farm, we’re thrilled to showcase ingredients grown right here in our community and can’t wait to welcome guests to celebrate with us this Thanksgiving,”
says Chef Brett.

Guests can complement their meal with exclusive wine pairings curated by Wine Director Matthew Reina. Alongside Vermont Artisanal Cellars, Reina brings rare and boutique selections from idyllic vineyards across the globe.

Choose from a two-course pairing ($40) or a three-course option ($50), or explore The Left Bank’s extensive ‘By The Glass’ menu, perfect for wine lovers eager to sample flavors not commonly found.

The Farm at The Weston: A True Farm-to-Table Experience

Adding to its commitment to local and sustainable dining, The Weston recently introduced The Farm, a regenerative, pesticide-free farm on 600 scenic acres.

With a state-of-the-art greenhouse and over 50 types of heirloom produce, The Farm supplies The Left Bank with fresh, seasonal ingredients daily. The farm also serves as a community space, offering hands-on tours and culinary workshops that bring guests closer to the farm-to-table experience.

Visitors can expect fresh, flavorful produce rarely found in Vermont, such as Black Strawberry Tomatoes, Pusa Asita Black Carrots, and French heirlooms.

Antoinette Kessler, a multigenerational North Dakota farmer, collaborates with Chef Combs to cultivate an unmatched selection of vegetables, fruits, and herbs, including options used in herb-infused cocktails that add a farm-fresh touch to The Left Bank’s menu.
