At the center of this new venture is Executive Pastry Chef Mary Pisanelli, whose resume includes some of the country’s top kitchens, but whose real superpower lies in turning simple ingredients into the most extraordinary creations.

The bakery will turn out more than a dozen varieties of bread daily, everything from crusty sourdough and airy ciabatta to rich brioche and classic baguettes. The sourdough starter itself has been evolving for over two years, like a well-kept secret finally ready to be shared.
One standout to watch for: the “Fat Cat,” a seasonal, ingredient-driven take on a traditional bialy. I can’t wait to try it for myself!

Yes, The Green Cat is baking the freshest, most flavorful bread, but it’s also telling the story of the land around it.
Ingredients come straight from The Weston’s 50-acre farm, showing up in buttery croissants, rustic quiches, and savory crostatas. There’s a rhythm to the menu that mirrors Vermont’s seasonal cycles, so you’ll always be pleasantly surprised by the offerings.
You’ll also find Parisian-style sandwiches layered onto demi-baguettes (hello, jambon and brie), and one particularly tempting feature: daily rotisserie chickens, prepared in limited batches and paired with farm-grown sides.
